Ruth Hawhee’s Gooseberry Cobbler

This delicious treat makes use of our gooseberries. Best served warm, and is well suited to serve with ice cream, or cream poured over.​

Ingredients
  

  • 1 Qt Gooseberries
  • 2 C Sugar
  • 1 tsp Water
  • 1/4 C Shortening
  • 1 Egg
  • ¾ C Milk
  • C Water
  • tsp Baking Powder
  • ½ tsp Vanilla Extract

Instructions
 

  • Preheat the oven to 350℉
  • Prepare (wash, pick and sort through) gooseberries and place in a 9″x9″ pan.
  • Spread out over the top of the berries 1 cup of sugar and water
  • Cream together 1 cup sugar and shortening.
  • Add the following to the creamed sugar/shortening to make a batter (which will be thick) – egg, milk, flour, baking powder and vanilla extract
  • Mix together and spread batter over berries in the pan
  • Bake for 1 hour​
  • Serve!
