
Ruth Hawhee’s Gooseberry Cobbler
This delicious treat makes use of our gooseberries. Best served warm, and is well suited to serve with ice cream, or cream poured over.
Ingredients
- 1 Qt Gooseberries
- 2 C Sugar
- 1 tsp Water
- 1/4 C Shortening
- 1 Egg
- ¾ C Milk
- 1¾ C Water
- 1½ tsp Baking Powder
- ½ tsp Vanilla Extract
Instructions
- Preheat the oven to 350℉
- Prepare (wash, pick and sort through) gooseberries and place in a 9″x9″ pan.
- Spread out over the top of the berries 1 cup of sugar and water
- Cream together 1 cup sugar and shortening.
- Add the following to the creamed sugar/shortening to make a batter (which will be thick) – egg, milk, flour, baking powder and vanilla extract
- Mix together and spread batter over berries in the pan
- Bake for 1 hour
- Serve!
